4 cups iceberg lettuce
2 cups romaine
1-1/2 cups cucumbers, chopped
3 roma tomatoes, chopped
1/2 pound mozzarella, cubed
2/3 chopped red onion
1 (7.5 oz.) jar marinated artichoke hearts, drained
1 can garbanzo beans or chick peas, drained and rinsed
ripe olives, sliced or whole (your preference)
Greek olives
stuffed olives
hard salami thinnly sliced and julienned
1/2 cup crumbled feta cheese
grated Parmesan cheese
DRESSING:
1/2 cup olive oil
1/4 cup lemon juice
1 tablespoon garlic powder
1 tablespoon dried oregano
1 tablespoon fresh, minced cilantro
Combine the first 12 ingredients in a large salad bowl. Sprinkle salad with feta and Parmesan cheeses. Combine dressing ingredients in a jar with a tight fitting lid and shake well. Pour dressing over salad and toss to coat. Yield: 8 servings. (Sandwich: stuff pita bread pockets with salad)
